Please note that in the video accompanying this recipe, I gave the wrong cook time. You should bake this cheesecake for 45- 50 minutes!. Sorry about the mistake, I was reading the recipe from a distance and I am practically blind!
Maple Blueberry Cheesecake
1 cup fresh blueberries
1 ½ packages of cream cheese
1/3 cup sugar
11/2 Tbsp flour
1/3 cup sour cream
2-3 Tbsp maple syrup
2 eggs
Graham cracker pie crust.
Get Cooking:
- Preheat oven to 325 degrees.
- Place prewashed and dried blueberries in the graham pie crust.
- Mix cream cheese and sugar with a mixer until smooth.
- Add sour cream and flour and mix again.
- Add eggs and maple syrup and mix a final time.
- Pour over the blueberries, making sure all the berries are covered.
- Bake in oven for 45 minutes, checking for doneness at 40- minute mark.
- Cool at room temperature and then refrigerate for 2 hours before serving.
- Serve with a bit of maple syrup drizzled over top of each slice and a few fresh blueberries. YUM!
- To make sure your cheesecake is done you will insert a toothpick or cake tester into the center of the cake. When it comes out clean, the cake is done.
