I hope everyone enjoyed a wonderful Easter and that the Easter Bunny found you.

This week we have 5 journal entries that will help you explore you and what makes you tick. We rarely take time to do that, so this is a great opportunity for you to find out more about yourself by answering these probing questions.

1. List all the things that make you happy right now. Beside each, tell why it makes you happy.

2. List all the people who make you feel happy and beside their name, write why.

3. List all the things in this coming week that make you happy. were you surprised by what made you happy?

4. List the ways that you feel 'lucky' to be who you are.

5. List some of the funny things that have happened in your home since we began this quarantine journey. there is bound to be a few!

Chocolate Chip Cookies

11/4 cups sugar

11/4 cups brown sugar

11/2 cups softened margarine

2 tsp vanilla

3eggs

41/4 cups flour

2 tsp baking soda

1 tsp salt

1-2 bags of chocolate chips. (I prefer 2 bags of milk chocolate chips)

 

Lets Get Cooking!

1. Using a mixer, cream the margarine and sugars well, until really smooth ( about 2minutes)

2. Add vanilla and eggs and mix until smooth.

3, Add 1 cup flour and the sofa and salt and the mix.

4. Add the remaining flour, one cup at a time and mix well. by the time you get to cup 4, you will need to mix by hand as this is a very heavy dough.

5. Add the chocolate chips and mix by hand.

6. Use a tablespoon to measure your cookies and drop them onto an uncreated cookie sheet, about 2 inches apart.

7. Bake in a 350 degree oven for 8-10 minutes. Remember to check at the 8 minute mark. Cookies should still be soft and starting to brown around the edges. remove from oven and onto a cookie rack to cool. You will notice that as they cool, they will flatten out some.

8. Enjoy with a nice cold glass of milk!

This recipe makes a lot of cookies, but they won't last long.

Please note that in the video accompanying this recipe, I gave the wrong cook time. You should bake this cheesecake for 45- 50 minutes!. Sorry about the mistake, I was reading the recipe from a distance and I am practically blind!

Maple Blueberry Cheesecake

 

1 cup fresh blueberries

1 ½ packages of cream cheese

1/3 cup sugar

11/2 Tbsp flour

1/3 cup sour cream

2-3 Tbsp maple syrup

2 eggs

Graham cracker pie crust.

 

Get Cooking:

  1. Preheat oven to 325 degrees.
  2. Place prewashed and dried blueberries in the graham pie crust.
  3. Mix cream cheese and sugar with a mixer until smooth.
  4. Add sour cream and flour and mix again.
  5. Add eggs and maple syrup and mix a final time.
  6. Pour over the blueberries, making sure all the berries are covered.
  7. Bake in oven for 45 minutes, checking for doneness at 40- minute mark.
  8. Cool at room temperature and then refrigerate for 2 hours before serving.
  9. Serve with a bit of maple syrup drizzled over top of each slice and a few fresh blueberries. YUM!

 

  • To make sure your cheesecake is done you will insert a toothpick or cake tester into the center of the cake. When it comes out clean, the cake is done.
